Cabo Taco Baja Grill put together another "Taco Festival" this week. If you haven't been, Cabo Taco offers a really unique take on Mexican food. Although, this isn't the type of spot you take "Authentic Mexican Guy" to...it's also not that white washed, lettuce in your burrito kind of place. Rather than offering these Me Too Mexican styles, Cabo Taco is more of a fusion spot, offering unique flavors that make sense together, like carnitas and bacon...and that's their normal menu!
For their Taco Festival, Cabo Taco created a menu of special tacos bringing unique tastes like Kung Pao Chicken to your plate...in a taco. My friends aren't foodies though for them, it's all about the beer. Fortunately, Cabo Taco always offers a great selection of craft brews.
The drink of the night for me was Brother David's Triple. It had a soft but sweet aroma and flavor...schooners of 10% craft brews vs $2.00 Dos Equis and Tecate specials kept our party happy.
The menu for the Taco Fest follows...
Roast Chipotle Duck Taco ~ The duck is first coated with a chipotle dry rub. Then roasted until the meat falls off the bone. When the duck is tender and juicy it's tossed in a dressing made from the duck's roasting juices and top it with a tangy citrus slaw.
Pineapple Shrimp Taco ~ Shrimp, pineapple, fresh cilantro and a special blend of spices, sautéed together.
Short Rib Taco ~ Short ribs marinaded over night in a special Korean sauce, then slow cooked it until tender, topped with cucumber kimchee.
Al Pastor Taco ~ Marinated pork slow roasted with chunks of pineapple until the meat is tender and juicy. Topped with onions and cilantro, and chipotle salsa.
Kung Pao Chicken Taco ~ Yes, it is just that! Kung Poa Chicken with peanuts and red chilies on top of a soft corn tortilla.
Tacos Diablos ~ Beef braised in a spicy chili sauce topped with onion and cilantro.
Tacos Al Pastor ~ Marinated Pork roasted with chunks of pineapple, served with onions, cilantro, and chipotle salsa.
Tacos Camarones Baja ~ Grilled shrimp topped with grilled onions, peppers, bacon, chipotle, and cheese.
Tacos de Tinga ~ Tender chicken breast cooked in onions and chipotle, served over sour cream on soft corn tortillas.
Tacos Pescado Verde ~ Grilled Tilapia topped with Tomatillo sauce, pickled onions, cabbage and cotija cheese.
Ceviche Taco ~ Crab, shrimp, and tilapia cooked in lime juice and mixed with a blend of fresh tomatoes, onions, cucumber, cilantro, and guava juice. Stuffed inside a crispy taco shell.
Chocolate Monkey Taco ~ Flour tortilla filled with Nutela and bananas. Thrown it on the grill until it all melts together.
